Feasting Fridays v2: Lemon Drizzle Loaf

So one recipe a week?
psh... i've been doing it every other day!
And I have learned that now, I am IN LOVE with cooking.
No, I am not too great at it... yet... but I think I'm coming around.

Since I have tried different recipes (dinners and desserts both), I decided to share my favorite one of the week. 

Lemon Drizzle Loaf
(found in the 1 mix, 100 cakes book)

This is amazingly good.
Like real good.
Very tasty. 
And honestly, not that hard to make.
I loved it so much when I made it last Friday, that I made it again the next night and brought it into work on Sunday. It has a hit :)


Servings: 8-10
(I cut it into like 12 pieces, more than plenty honestly)
Prep time: 20-30 minutes
Cook Time: 40-50 minutes

Ingredients:

oil or melted butter (for greasing)
1.5 cups all-purpose flour
1 tbsp baking powder
3/4 cup unsalted butter, softened
generous 3/4 cup superfine sugar
3 eggs, beaten
1 egg yolk
finely grated rind of 1 lemon
2 tbsp lemon juice
fine strips of lemon zest to decorate

syrup mix:

3/4 cup confectioner's sugar
3 tbsp lemon juice

Instructions

1. Preheat oven to 350. Grease and line a 5-cup loaf pan.

2. Sift the flour and baking power into a large bowl and add the butter, superfine sugar, eggs, and egg yolk. Beat well until the mixture is smooth, then stir in the lemon rind and juice.


3. Spoon the mixture into the prepared pan and smooth the surface with a spatula. Bake in the preheated oven for 40-50 minutes, or until well risen and golden brown.


4. Remove the pan from the oven and transfer to wire rack. For the syrup, put the confectioner's sugar and lemon juice into a pan and heat gently without boiling, stirring, until the sugar dissolves.


5. Prick the top of the loaf several times with a skewer and spoon the syrup over it. Let cool completely in the pan, then turn out, sprinkle with strips of lemon zest and serve in slices.

Good for you! I love cooking and am always trying new recipes,I wish I could remember to take pictures and post about them! I definitely need to start doing that.
