One of my new years resolutions this year was to try at least one new recipe a week.
In addition to that, I would like to keep a record of these recipes and share them with ya'll.
I plan to do this on Fridays (hence the name Feasting Fridays)
So last night, I found a recipe on allrecipes.com
that was called
Baked Salmon II
Now I am a HUGE salmon lover.
So this, I was definitely looking forward to.
In addition, it was easy.
I mean real easy.
And fairly inexpensive once you get all the ingredients.
Total price: $12.00
*but this included getting all the ingredients, and really now that I have them, it would only cost me about $6.00 for two pieces of fresh salmon next time I wanted to make it.
Prep Time: 15 minutes
Cook time: 45 minutes
Ready in: 2 hours
Serves: 2
Ingredients
- 2 cloves garlic, minced
- 6 tablespoons light olive oil
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 2 (6 ounce) fillets salmon
Directions
- In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
- Preheat oven to 375 degrees F (190 degrees C).
- Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

Served with pasta and vegetables and salad on the side. And it definitely made its way into my recipe book. This is a must try, especially if you are a salmon lover, and so quick and easy

Re: your comment on my blog - one last thing to try if you haven't already, b/c I paid a domain name last March and all my posts still showed up, so I'm not sure why yours wouldn't!
But anyway, (and I hope this isn't a dumb question) when you bought the domain, was there an option to direct {yourblogname}.blogpost.com traffic to your new domain? I vaguely remember there being one, but it's all a little fuzzy for me now, so don't quote me. Just one last thing to try before relocating to WordPress, hehe. (Which, if you're serious about, definitely keep me posted -- I'd love to not be "alone" in ditching Blogger, hehe!)
Love salmon! (plus its so healthy) and that's an easier (cleaner) recipe version than I use! are you breast feeding? bc if you are, then I'm sure lil princess appreciates it too!

mama! i am making this recipe as we speak.. i've kept it "flagged" ever since you posted it! we've been eating teryiaki marinated salmon for YEARS.. and we LOVE salmon in our house.. it's about time we tried it a different way! im so excited!! thanks so much for sharing!!
